When the weather turns frosty, nothing beats a bowl of the Finnish salmon soup, lohikeitto. This hearty, creamy dish is simple to make and brings the warmth of Nordic tradition to your table. Ingredients:
2 tbsp butter
1 diced onion
4 cups fish stock
4 medium potatoes, peeled and cubed
2 sliced carrots
1 lb. salmon fillet, cut into chunks
1 cup heavy cream
1/2 tsp white pepper
Salt to taste
A handful of chopped fresh dill
Instructions:
In a large pot, melt the butter over medium heat.
Sauté the onion until soft and fragrant.
Add the fish stock, potatoes, and carrots. Simmer until the vegetables are tender (about 15 minutes).
Gently add the salmon pieces and cook for 5–7 minutes, until the fish is opaque and flaky.
Stir in the heavy cream, white pepper, and salt. Let the soup warm without boiling.
Sprinkle with fresh dill before serving.
