Ingredients:
½ cup dairy-free butter*
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¾ cup brown sugar, packed tight*
¾ cup granulated sugar
3 overripe bananas
¼ cup dairy-free milk*
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
Instructions:
Start by preheating the oven to 350°F. Next, lightly oil an 8x4 inch bread pan, or spray it with cooking spray. At the same time, you should allow the dairy-free butter to soften to room temperature.* Then in a small bowl on the side, mash 3 overripe bananas until they are mostly smooth. In a medium mixing bowl, cream the dairy-free butter and sugars together until smooth. Then add the mashed bananas to the creamed butter and sugars along with the dairy-free milk, apple cider vinegar, and vanilla. Mix until combined. In a large bowl, sift the flour, baking soda, and salt before combining. Add the wet ingredients to the dry and mix until combined. Pour the batter into a greased bread pan. Place into the preheated oven and bake for 60-70 minutes (or until a toothpick comes out clean).* Let the banana bread cool to room temperature before you enjoy it.
*Notes:
Earth Balance plant-based butter is best for this recipe
I use light brown sugar, but both light and dark brown sugar work for this recipe
I use oat milk as my dairy-free milk but soy and other options also work
To speed up the butter-softening process, place the stick in a bowl of warm water
Depending on different oven variations and sizes, cooking time may vary, so always check your bread with a toothpick
