Indulgent Vegan Pancakes That Double As Waffles

Whether you’re a new vegan looking to expand your recipes or simply want a comforting breakfast meal, these vegan chocolate chip pancakes and waffles are perfect for you. These decadent pancakes can easily be turned into waffles by making 2 simple changes to the recipe! From the rich chocolate chips to the fluffy batter, these stacks of pancakes and piles of waffles will be the best morning sweet to delve into. Use your creativity and substitute the chocolate chips for blueberries or bananas and even add on some plant-based butter, fruit, or syrup and your breakfast will be something to look forward to every day!

Prep time: 10 minutes

Cook time: 10 minutes

Total time: 20 minutes

Serves: 4-6 People


Pancakes:

Ingredients:

  • 2 ½ cups all-purpose flour

  • 3 tablespoons sugar

  • 2 tablespoons baking powder

  • 1 tablespoon vegetable or canola oil

  • A pinch of salt

  • 2 cups of oat milk* 

  • ½ cup of water

  • 1 teaspoon vanilla

  • Chocolate chips to taste*


Instructions:

In a large bowl, add all of the ingredients and mix until just combined. Allow the batter to rest for 5 minutes before you fold the batter 2-3 times to ensure it is well combined.* Then, pour the batter onto a greased skillet or griddle. Make sure the batter is in the desired shape and size. Next, allow it to cook over medium to medium-high heat until bubbles form around the edges or the pancakes turn golden. Finally, add your desired toppings, serve, and enjoy!


Waffles:

Ingredients:

  • 2 ½ cups all-purpose flour

  • 6 tablespoons sugar

  • 2 tablespoons baking powder

  • ¼ cup vegetable or canola oil

  • A pinch of salt

  • 2 cups of oat milk* 

  • ½ cup of water

  • 1 teaspoon vanilla

  • Chocolate chips to taste*


Instructions:

In a large bowl, add all the ingredients and mix until just combined. Next, allow the batter to rest for 5 minutes then fold the batter 2-3 times to ensure it is well combined.* Pour the batter into a greased waffle maker. Make sure the batter is in the desired shape and size. Then allow the waffle to cook over medium or medium-high heat until it is golden-brown. Finally, add your desired toppings, serve, and enjoy!


Notes:

  • Feel free to replace the oat milk with the vegan/plant-based milk you prefer.

  • The chocolate chips usually measure out to about ½ cup.

  • Be sure not to overmix the batter as it can cause pancakes and waffles to become tough.
